Preparation: First, place the green beans into a large skillet and cover with water until it boils. Then reduce the heat to medium-low and simmer till the beans soften (about 5 minutes). Next, drain the water and add butter to cook and stir for 2-3 minutes when the butter will have melted. Lastly, cook and stir with garlic for 3-4 minutes until the garlic is fragrant then season with salt and lemon pepper.

Taurus – carrots

Sauteed carrots

Ingredients: You need carrots (2 pounds), ¼ fresh ground black pepper, 1 teaspoon of kosher salt 1 ½ fresh dill or parsley (chopped), and 2 tablespoons of unsalted butter.

Preparation: Peel the carrots and slice then place them in a large saute pan and add 1/3 cup water, salt, and pepper. Cover the pan and cook on medium-low heat for 8 minutes until the carrots are cooked through then add butter and saute for 60 seconds.  When the carrots are covered with butter and water is evaporated, toss in the dill/parsley and sprinkle with pepper and salt.

Gemini – radishes

Simple roasted radishes

Ingredients: 1 bunch of radishes greens, fresh chopped parsley (optional), 1 tablespoon olive oil, salt, and pepper.

Preparation: Preheat your oven to 400F and then add the cut radishes into the baking dish with olive oil, salt, and pepper. For smaller radishes, the process takes only 15 minutes but it might be longer for larger ones. When they are tender-crisp, toss in the parsley if you want.

Cancer – potatoes  

Garlic roasted potatoes

Ingredients: 3 pounds small red or white potatoes, 1 teaspoon ground pepper, ¼ cup olive oil, 1 1/2 teaspoons kosher salt, 2 tablespoons minced fresh parsley and 2 tablespoons garlic (minced).

Preparation: Preheat oven to 400F. Cut the potatoes in ½ or ¼ sizes and place in a bowl, then add olive oil, salt, and pepper and toss till the potatoes are well coated. Transfer them to a sheet pan and spread out into 1 layer and roast for 45-60 minutes until brown and crisp. During cooking flip twice to ensure that they are evenly browned. Lastly, remove potatoes from oven, toss parsley, and season to taste. Serve while hot.

Leo – asparagus

Ingredients: 1 bunch thin asparagus spears, olive oil, 1 ½ tablespoon grated Parmesan cheese, and 1 garlic clove (optional), 1 teaspoon sea salt, ½ ground black pepper, and 1 tablespoon lemon juice.

Preparation: Mix the asparagus in a mixing bowl with olive oil, Parmesan cheese, garlic, salt, and pepper. Arrange the asparagus on a baking sheet in a single layer and bake in a preheated oven at 425F for 12-15 minutes depending on thickness. Finish by sprinkling lemon juice when serving.

Virgo – mint

Ingredients: ½ cup extra-fine bulgur wheat, 4 firm Roma tomatoes, 2 bunches parsley, 1 English cucumber, 4 green onions, 12-15 fresh mint leaves, salt, lime juice, extra virgin olive oil, and romaine lettuce.

Preparation: Wash and soak the bulgur wheat in water for 5-7 minutes then drain to get rid of excess water and set aside. Finely chop your vegetables, herbs and green onions and mix along bulgur, salt, lime juice, and olive oil. You can cover the tabouli and refrigerate for 30 minutes then serve with pita and romaine lettuce on the side.

Libra – mushrooms

Superb sautéed mushrooms

Ingredients: 3 tablespoons of olive oil, butter, 1 pound button mushrooms (sliced), 1 garlic clove, teriyaki sauce, red cooking wine, and ground black pepper to taste.

Preparation: heat olive oil and butter in a large saucepan over medium heat. Then cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic, and pepper till light brown (about 5 minutes). Reduce the heat and simmer until the mushrooms are tender (5-8 minutes).

Scorpio – cucumbers

Salt and vinegar cucumbers

Ingredients: ¼ cup white wine vinegar, 2 pounds cucumber, 2 tablespoons olive oil and granulated sugar, freshly ground black pepper, 1¼ teaspoons flaky sea salt, and ¼ chopped fresh dill.

Preparation: Mix the vinegar, salt, sugar, and pepper in a large bowl and whisk. Next, place sliced cucumbers in the bowl and toss. Cover and refrigerate the mixture for 30 minutes and season with pepper or salt to taste.

Sagittarius – snap peas

Ingredients: 1 ½ pounds fresh sugar snap peas, 1 ½ teaspoons kosher salt, 1 tablespoon good olive oil, 4/4 ground black pepper, sea salt or fleur de sel.

Preparation: First, remove and discard the stem from each sugar snap pod. Heat the olive oil in a large saute pan over medium-high heat and add the peas, salt, and pepper while tossing occasionally for 3-5 minutes until the peas are tender. Lastly place the sugar snap peas in a serving bowl, sprinkle with salt and serve.

Capricorn – dill

Creamy spinach and dill

Ingredients: 1/3 cup coarsely chopped fresh dill, ground black pepper, 1 tablespoon unsalted butter, ¼ chopped onion, 1/3 cup heavy cream, ¼ teaspoon fresh grated nutmeg, 1 clove garlic, and ¼ kosher salt.

Preparation: Melt the butter in a large pot over medium heat, add onion and cook for 3-5 minutes. Add spinach, cover and cook until wilted then transfer to a bowl. Using the pot, add garlic, nutmeg, and cream and let it come to a slow simmer then cook until it thickens and reduces slightly. You can add extra salt and pepper at this point. Then, return the spinach (squeezed) and coat it in the reduced cream. Remove the pot from the heat and stir in the deal while seasoning with pepper and salt as needed.

Aquarius – tomatillos

Tomatillo salsa verde

Ingredients: 1 pound tomatillos (husked), ½ finely chopped onion, 1 Serrano Chile pepper, 1 teaspoon garlic, 2 tablespoons fresh oregano, 1 ½ teaspoon salt, ½ tablespoon ground cumin, and 2 cups of water.

Preparation: Place all ingredients into a saucepan and add water then boil over high heat. Then reduce the heat to medium-low and simmer until the tomatillos are soft for 10-15 minutes. Then use a blender to puree the tomatillos and water until the mixture is smooth.

Pisces – parsley

Zucchini noodles with parsley-pistachio pesto

Ingredients: 1 ½ pounds zucchini, 2 cups Italian parsley, arugula, and sherry vinegar, 1/3 cup shelled pistachios, 1 large clove garlic, 1 tablespoon freshly squeezed lemon juice, ½ cup of olive oil, kosher salt, and pepper.

Preparation: First, spiralize the zucchini and pat them dry with paper towels and transfer to a large bowl. Second, combine the parsley, arugula, pistachios, and garlic in a blender until they are coarsely chopped. Add Parmesans vinegar, lemon juice, and pulse until combined. Then with the machine running, slowly add the olive oil until the pesto is smooth and thick.

Lastly, add the pesto the bowl with zucchini noodles and toss until they are well combined then garnish with the grated parmesan and pistachios. This should be served immediately.
