1. Root vegetable pancakes

Here are a few things you'll need:

  • Ground flax (2 tablespoons mixed with 5 tablespoons of water)
  • Non-dairy milk (½ cup)
  • Salt (1 teaspoon)
  • Brown rice flour (½ cup)
  • Fresh thyme (½ teaspoon - minced)
  • Rosemary garlic cashew cream (8 cups)
  • Fresh rosemary (½ teaspoon)
  • 1 large shallot
  • Cascadian farm root vegetable hashbrowns (24oz - diced)

Step-by-step guide

  1. After mixing your flax in water, set it aside for about 10 minutes,
  2. When the flax mix has achieved a thick consistency, add it to a large bowl then add the rice flour, non-dairy milk, rosemary, thyme, and salt. Whisk these together until everything is well combined.
  3. Your next step is to add the root veggie mix and diced shallot then begin folding your batter.
  4. Place a non-stick saucepan on medium-low heat and add half a cup of your batter into the pan. Each pancake should be about half an inch thick. Each side should be left to cook for about 3-5 minutes.
  5. Follow the same process to cook the rest of the pancakes. Then top up with some rosemary garlic cashew cream before serving.

2. Vegan salad recipe

What you'll need:

  • Medium-firm tofu (2 blocks)
  • Yeast (½ teaspoon)
  • Lemon juice (1 teaspoon)
  • Cashews (1 cup - soaked for about four hours)
  • Distilled white vinegar ( 1 teaspoon)
  • Dijon mustard (2 teaspoons)
  • Fresh chives (1 tablespoon)
  • Black salt (½ teaspoon, chopped)
  • Water (¼ cup)
  • Black Pepper (according to taste).

Step-by-step guide

  1. Ensure your tofu is pressed for about 15 minutes. Then wrap in a clean towel while working on your salad dressing.
  2. Blend the rest of the ingredients together except the chives. Continue until you achieve a thick and creamy consistency.
  3. Chop up your tofu to make random chunks then gently press another clean towel on it to remove excess moisture. Transfer the pressed tofu into a bowl.
  4. Add in the chives and the blended dressing then fold until everything is well incorporated. Add some black salt and pepper to taste.

3. Savory golden oatmeal recipe

What you'll need:

  • Garlic (1 clove)
  • Roasted red peppers (2 tablespoons - grated)
  • Carrots (½ cup - minced)
  • Turmeric (¼ teaspoon - diced)
  • Fresh herbs (½ tablespoon)
  • Vegan cream cheese (1 tablespoon)
  • Low-sodium vegetable broth (2½ cups)
  • Rolled or quick oats (1 cup)
  • Salt and black pepper according to preference.

Step-by-step guide

  1. Pour a small amount of vegetable broth into a medium-sized pot and add some minced garlic. Sauté the mix over medium heat until you get a translucent appearance.
  2. Add some more broth (but not all) into the pan, then your carrots, red pepper, herbs, and turmeric. Leave to cook for another 3 minutes. Add the vegan cream cheese and stir until well-mixed.
  3. The next step is to add the oats and the rest of the vegetable stock into the pot and allow your mixture to boil. Adjust the heat accordingly until you achieve your desired consistency. Keep stirring frequently during this process.
  4. When it's ready, add the mixture into a bowl and add some herbs and vegetables depending on your preference.
