For this recipe, you'll need:

  • Coconut oil: 1/4 cup
  • Gluten-free oat flour: 3/4 cup
  • Baking soda: 1/2 teaspoon
  • Coconut flour: 1/2 cup

The process

  1. In an electric mixer, mix the oil and maple syrup. After beating for a minute or so, add your flax egg and mix until you have a smooth consistency.
  2. Also in the mixer, add the flour (both kinds) and the baking soda. Keep mixing until the dough starts to form. Then cover the bowl and put the dough in the fridge for at least two hours.
  3. Preheat the oven to 350 degrees F. Get your baking sheet ready by lining it with parchment paper.
  4. Lay another parchment paper on a flat surface and sprinkle some flour on there. Then remove your chilled dough from the fridge, leave it to sit for 30 minutes.
  5. Knead the dough gently and roll it into a 1/4-inch thickness. Use your desired style of cookie cutters to cut out your snack.
  6. Place the cookies in the oven for about 11 minutes. The goal is for it to be golden brown before taking them out. Then, allow them to cool.
