Perfect No Bake Cheesecake Topped With Salted Caramel Fudge Sauce Will Steal The Show During Holidays

When it comes to the winter holidays, food traditions are an important part of the celebrations in families and countries around the world. The festive season tends to involve lots of food: from Christmas dinner to the mandatory turkey sandwiches not to mention the vast amounts of sweets and beloved desserts.

Recipe for perfect Christmas dinner

Here we've got a special vegan cheesecake recipe for your Christmas table that will save you a lot of time as it's super easy and no-bake.

A bit of processing, a bit of blending, a bit of stirring and your awesome cheesecake is ready!

So here is how to make a vegan cheesecake

Cheesecake ingredients

  • 1 cup (150g) Macadamia
  • Nuts1/2 cup (88g) Pitted Medjool Dates (Packed)*
  • 1 cup (80g) Dried Dessicated Coconut3 cups (450g)
  • Raw Cashews (soaked overnight, drained and rinsed)

  • 3/4 cup (180ml) Water
  • 3/4 cup (180ml) Maple Syrup
  • 1/2 cup (120ml) Coconut Oil (Melted)

  • 1/4 cup (60ml) Fresh Squeezed Lemon Juice
  • 1 tsp Vanilla Extract
  • 1/2 cup (120ml) Coconut Butter (Melted)
  • *1/2 cup (120ml) Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/2 tsp Sea SaltSea Salt
  • Macadamia Nuts

Instructions

1) Spray a round pan with vegan oil and cover the pan's bottom with parchment paper. Set aside.

2) Add pitted dates, macadamia nuts and desiccated coconut to the blender jug and blend until the mixture transforms into a sticky dough. eep processing until the mixture starts to clump together. Put the sticky dough into the pan and smooth it down into a pie crust. Press the dough down into a nice flat layer and put it into the freezer to rest.

3) Rinse your cashew nuts and put them into the blender jug. Add maple syrup, water, lemon juice, vanilla extract and melted coconut oil, blending everything together to achieve smoothness. Pour the smooth mixture over the macadamia crust and spread it across the crust with a spoon. Place the cheesecake into the freezer for about 4-6 hours.

4) Remove the dessert from the pan and place it onto a cake stand to proceed with the topping.

5) Add maple syrup, melted coconut butter, sea salt and vanilla extract into a bowl, stirring these ingredients into a caramel sauce. Spread the sauce out over the cheesecake.

6) Decorate the cheesecake with some macadamia nuts. Before serving, allow the cheesecake to thaw at room temperature for about half an hour.
