It isn’t necessary to chew raw carrots and boiled beets to lose weight. You can make a lot of healthy and tasty things with veggies at home: salads, casseroles, stews, and even desserts. Today, we have prepared 8 simple recipes, with vegetables as the main ingredients. Just try them once, and your family will ask to prepare these treats time and again.
1. Taboule salad
If you want to pamper yourself with an oriental delicacy, let it be Taboule vitamin salad. The main ingredient here is crushed wheat (bulgur) and the dish gets its interesting taste from the vegetable and herb mix. Boil and cool the wheat, then add chopped parsley, mint, green onions, and diced tomatoes. Season it with lemon juice, olive oil, salt, and pepper.
2. Baked broccoli with garlic
If you don’t like broccoli, it means you don’t know how to choose the right dressing for it. Put the broccoli in a bowl, drizzle over vegetable oil, then add salt, pepper, and pressed garlic. Mix well. Place the broccoli on a baking sheet and bake for 12 minutes at 360°F (180°C). Before serving, add soy sauce and lemon juice, and sprinkle with chopped onion.
3. Pumpkin cream soup
Heat the vegetable oil in the pan, then steam peeled and diced onions, potatoes, pumpkin, and a bit of rosemary. Season vegetables with nutmeg, curry, paprika, ginger. Then puree the vegetables. Fill with hot vegetable broth and bring to the boil.
4. Crispy zucchini
Cut zucchini into finger-sized slices, place in a bowl, and drizzle with olive oil. Mix thyme, oregano, basil, chopped garlic, and nuts (almonds or walnuts). Roll each slice in the mixture. Place on a baking sheet and bake for 15 minutes at 400°F (200°C).
5. Baked cherry tomatoes
Half the cherry tomatoes. Place on a baking sheet and pour a mixture of olive oil and chopped garlic. Add salt and pepper to taste. Bake until ready.
6. Vietnamese spring rolls
Chop up your favorite vegetables and mix. Sprinkle with salt, pepper, and your favorite spices. Take a sheet of rice paper, soak it in cold water and put the filling on it. Make the rolls. Serve either immediately or prepare pre-fried ones.
7. Vegetable stew
Prepare vegetables (eggplants, red and yellow bell peppers, zucchini, onions): wash, peel, and chop. Eggplants can be salted, thrown back into a colander to drain, and then rinsed. Do it to remove the eggplant's bitterness. Pour some vegetable oil into a deep frying pan, heat up, and fry the onion. Add the rest of the vegetables, salt to taste, and cover. Stew until ready. If the vegetables give too little juice, you can add boiling water. Serve with greens.
8. Caramelized carrots
Peel the carrot, cut it lengthwise in half or quarters. Fry in olive oil for a few minutes, cover, and simmer for 20 minutes. Check the readiness by poking the vegetables with a fork. Turn the heat off, season with thyme, salt, and pepper. Add lemon juice and, if do desired, maple syrup.
