This. Without consent of at least 1 parent its not a proper baptism. Also as a christian (even though not catholic) what she did was against everything that our faith is about. You dont lie,you dont imposter a servant of god to do an act that only benefits yourself and claim it is in the name of god and like mentioned above, she cannot make that commitment for a child that isnt hers without the parents agreeing to such commitment.

Whether this is a real baptism or not, what’s resonating with me is the smugness of JNMIL that she did something forbidden behind the parents’ backs and got away with it.

Honestly? If you don’t tell what she did, then you carry some of the blame here. I’m religious, but I would blow my top if my MIL didn’t respect my wishes in regards to my child. It’s not her choice to make — and she will absolutely disregard YOUR wishes when the time comes.
