  • 15 ounces pumpkin;
  • ¾ cups sugar or substitute equivalent;
  • ½ cup low-fat baking mix;
  • 12 ounces fat-free milk;

  • 1 cup raw pecans;
  • 2 tsp cornstarch;
  • ½ cup maple syrup or honey;
  • uncut stevia;
  • 2 tbsp cocoa powder;
  • 2 tbsp molasses;

In a large bowl, mix all ingredients except pecans and stir until the mixture is smooth. Chop pecans and add them to the mix. Prepare a pie crust and pour the dough into it. Decorate with some additional pecan and set into the oven for 45 minutes at 350º F. Chill the pie a little bit to firm it up.

Low-Fat Christmas Pudding


  • raisings;
  • sultanas;
  • currants;
  • 3-4oz Brandy;
  • cherries, apples, and carrots;
  • 2.5oz flour;
  • 1.7oz breadcrumbs;
  • 1.7oz sugar;
  • cornstarch;
  • 0.3oz lemon juice;

Soak the fruit in Brandy overnight. Put the cherries into flour and add breadcrumbs and sugar. In a separate bowl, mix sliced apples and carrots, add lemon juice, and soaked fruit. Beat the cornstarch with milk and add to the mix. Pour the mixture into a dish and microwave for 5 minutes. Once it's cooked, leave it in a dry place to cool a little bit.
