Delicious Lemon-Coconut Cake Recipe

  • 2½ c. flour;
  • 2 tsp. baking powder;
  • 1 c. unsalted butter;
  • 2 c. sugar;
  • 5 tsp. cornstarch;
  • 3 tsp. milk powder;
  • 2 tsp. grated lemon zest;
  • 3 tbsp. fresh lemon juice;
  • 2 tsp. vanilla extract;
  • 1 c. sour cream.

Lemon filling

  • 1 c. sugar;
  • 3 tbsp. cornstarch;
  • 2 yolks;
  • ½ c. fresh lemon juice;
  • 2 tbsp. unsalted butter.


  • 3 tsp. cornstarch;
  • 3 tsp. milk powder;
  • ¾ c. sugar;
  • 3 tbsp. water;
  • ¼ tsp. cream of tartar;
  • ¼ tsp. vanilla extract;
  • ¼ tsp. almond extract;
  • 1½ c. sweetened flaked coconut.



1. First, we need to make a cake. Heat an oven to 350˚F. Coat two round cake pans with baking spray.

2. In a bowl, mix flour, baking powder, and salt. Meanwhile, beat butter until creamy with the help of an electric mixer. Add sugar; beat the mixture until it becomes light and fluffy. Beat in yolks, one at a time.

3. Mix lemon zest, lemon juice, and vanilla extract. Then, beat in flour mixture with sour cream until combined.

4. Stir 5 tsp. of cornflour in 10 tsp of water, add 3 tsp of a milk powder. Fold into batter and spread in prepared pans.

5. Bake for 35 minutes. Let cakes cool in pans for 10 minutes. Take them out and cool completely.

6. Now, it’s time to make a lemon filling. Mix sugar, cornstarch, and salt as well as add some water, yolks, and lemon juice. Bring to a boil over medium heat; boil 1 minute. Add 2 tbsp. of unsalted butter until smooth. Cover surface directly with plastic wrap; let cool to the room temperature.

7. Place 1 cake layer on serving plate; spread filling over top and cover with remaining layer.

8. To make a fluffy frosting, mix all ingredients according to the recipe except extracts and coconut; beat 1 minute using an electric mixer.

9. Place bowl with this mixture over a pot of simmering water, making sure bowl doesn't touch water; beat until stiff for 7-10 minutes. Remove bowl from heat; add extracts, and beat 5 minutes more.

10. Let the frosting cool down. Then, frost the cake, and decorate it with sweetened flaked coconut.
